Just wanted to share some of the recipes we use during our time together.  Jacie and I love each of these drinks and treats! Hope you do too!!

BEVERAGES

Tru’s Iced Fruit Green Tea

Bring a kettle of water to boil.  Add 4 green tea bags and allow to steep 7-8 minutes.  Pour tea into a pitcher over ice and sweeten as desired with sugar, honey, stevia, or any sweetener of your choice.  Slice an orange, lemon, lime, and a nectarine.  Add to the tea.  Allow flavors to combine for about 30 minutes.  Enjoy over more ice! (You can use any fruit of your choice such as melons or peaches.  This just happens to be Jacie’s favorite combination.)

Peppermint Tea-Add a few fresh peppermint leaves to each cup.

Orange Spice Tea-Stir with cinnamon sticks and add honey.

Pumpkin Spice Tea-Sprinkle in ground cinnamon.

RECIPES  

Jacie’s Colored Sugar Cookies (Mixes easily by hand)

2 eggs

2/3 cup oil

2 teaspoons vanilla

1 tablespoon grated lemon rind

¾ cups sugar

2 cups flour

2 teaspoons baking powder

½ teaspoon salt

Colored sugar (for top of cookies)

Beat eggs slightly.  Add and mix remaining ingredients with eggs.  Mixture will be oily.  Drop by teaspoonfuls on cookie sheet.  Flatten with glass bottom dipped in colored sugar.  Bake 7-9 minutes at 400 degrees til edges are lightly browned.

Brown Sugar Shortbread

1 cup butter, softened

½ cup packed brown sugar

2 ¼ cups flour

Cream butter and sugar.  Gradually stir in flour.  Turn onto a lightly floured surface.  Knead til smooth for 3 minutes.  Pat into a 1/3” thick rectangle, 11” x 8”.  Cut into 2” x 1” strips.  Place 1” apart on ungreased baking sheet.  Prick each strip with a fork.  Bake at 300 degrees for 20-25 minutes.  Cool 5 minutes on pan.  Remove to wire rack to cool completely.

Scottish Shortbread

½ pound of butter

½ cup sugar

2 ¾ cups sifted flour

1/8 teaspoon salt

Cream butter and sugar then gradually add flour and salt.  Knead on slightly floured board.  Roll out to about ½” thick.  Cut into 2” x 1” strips.  Place 1” apart on ungreased baking sheet.  Prick each strip with a fork.  Bake at 300 degrees for 20-25 minutes.  Cool 5 minutes on pan.  Remove to wire rack to cool completely.

Chocolate Chip Shortbread  (Makes 6 dozen cookies)

2 cups unsalted butter, softened

1 ½ cups sugar

4 cups flour

1 package (12 oz.)Ghirardelli semi-sweet chocolate chips

½ teaspoon salt

Pre-heat oven to 275 degrees.  Coat cookie sheet with cooking spray.  Cream together butter, sugar, and salt in a large bowl.  With a wooden spoon, stir in flour.  For chocolate cookies, melt ½ cup chocolate chips and add to dough.  For plain dough, do not melt chocolate.  For either dough add 1 cup chocolate chips to dough.  Roll to about ¼” thickness on a lightly floured surface.  Cut into 2” x 1” strips or any desired shape.  Bake on cookie sheet for 20-25 minutes.

June’s Molasses Cookies

1 cup sugar

¾ cups margarine

4 tablespoons molasses

1 egg

2 cups flour

2 teaspoons baking soda

¼ teaspoon each ginger, cloves, and cinnamon

½ teaspoon salt

Mix the first four ingredients together.  Add the remaining and combine well.  Roll into 1” balls, then roll them in sugar.  Bake at 350 degrees until flat and cracked.
